Paleo Herb Crackers

Ingredients

  • 2 cups almond flour
  • 1/2 teaspoon sea salt
  • 2 tablespoon herbs
  • 2 tablespoons water
  • 1 egg white (see Chicken Nuggets for uses of egg yolk)
  • 1 tablespoon olive oil
  • 1/4 teaspoon coconut oil (melted)

Supplies/Equipment

  • rolling pin
  • 2 sheets of parchment paper
  • pizza cutter

Instructions

Preheat oven to 350.

Mix by Hand

  1. Combine almond flour, salt, and herbs in a medium mixing bowl.
  2. In a small bowl, whisk together the water, egg white, olive oil, and melted coconut oil.
  3. Pour wet ingredients into dry and stir until stiff dough forms and all dry ingredients are wet. This will take some work. You may need to add a little water or olive oil.

Mix by Processor

  1. Combine almond flour, salt, and herbs in food processor bowl.
  2. In a small bowl, whisk together the water, egg white, olive oil, and melted coconut oil.
  3. Process the dry as you pour the liquid into it, until the batter forms into a dough ball. If it doesn’t form a ball, slowly add water or olive oil until your get a ball.

All Together Again

  1. Place dough between sheets of parchment paper and roll out to an even 1/8” (3mm) thickness.
  2. Transfer parchment to a baking sheet pan and remove the top piece of parchment.
  3. Using a pizza cutter trim off uneven edges and cut into cracker size pieces.
  4. Sprinkle top with sea salt.
  5. Bake for 10 minutes.
  6. Turn off oven and let crackers sit inside oven for an additional 10 minutes, until golden.
  7. Let crackers cool, then eat

Saving Leftovers

Put in air tight container and in the fridge for 3-4 days. Or freeze for longer.

Modifications

Try 2 tsp of tomato paste and basil.

Try crushed or chopped garlic and use half butter, half olive oil.

Replace 1/4 cup of almond flour with flaxseed meal.
